Came across a recipe for this (Steamed Tofu with Ground Pork - Delightful Plate), and loved it so much, we have it several times a month. As always, I changed the basics to suit my tastes. I highly recommend a bamboo steamer for this recipe, otherwise you have the problem of moisture condensing and dripping on the plate.
This dish has the great advantage that you can prepare up to steaming, move on to preparing other dishes, and 15 minutes before they’re ready, put this in the steamer.
Ingredients
- 1/2 Package of firm tofu, cut into 1/2 inch slices
- 8 ounces of ground pork
- 4 cloves of garlic, minced
- 2 diced scallions
- 4 teaspoons soy sauce
- 2 teaspoons oyster sauce
- 2 teaspoons cornstarch
- 2 teaspoons water
- 1/2 teaspoon white pepper
- 1/2 teaspoon black pepper
- seasame oil
- olive oil
- 1 egg (optional)
Directions
- Add 2 tsp of olive oil to a pan/wok on medium heat
- Add and saute garlic for 30 seconds
- Add ground pork, break up (don’t need to cook through)
- Add 2 tsp oyster sauce and 2 tsp soy sauce, mix for about 30 seconds
- Combine cornstarch and water, and mix slurry into pan
- Add 1/2 tsp white pepper (adds a little more heat than black)
- Stir for 15-30 seconds, turn off heat
- Remove pork to a heat-resistant plate, spread around
- Add tofu slices around the perimeter, overlapping
- Drizzle 2 tsp of soy and some seasame oil over the tofu
- Add 1/2 tsp black pepper over the dish
- Spread scallons over the dish
- Optionally: Add an egg to the center of the dish
- Carefully place dish in steamer, cook for 15 minutes
- Even more carefully remove dish, and serve
