Nobu's Miso Sablefish

Difficulty: Easy

Prep time: 3 days

Cook time: 15 minutes

Ingredients:

  • 2 lbs Sablefish (4 1/2 pound filets)
  • 1/4 cup Mirin
  • 1/4 cup Sake
  • 4 Tbsp white miso paste
  • 2 Tbsp sugar
  • 1 tsp fish sauce (optional)

Directions:

  • Prep:
  • Add Mirin and Sake to a saucepan
  • Bring to a boil
  • Reduce heat to low, whisk in miso paste
  • Raise heat to high (but not boiling)
  • Whisk in sugar until dissolved
  • Let paste cool to room temperature
  • Unwrap fish, pat dry
  • Cover fish with miso paste, put in a resealable bag, squeezing out as much air as possible
  • Put marinated fish in the fridge for 2-3 days
  • To cook:
  • Preheat oven to 400°F
  • Heat an oven safe skillet on high heat with some oil
  • Remove the fish from the bag. Shake off some excess marinade (but don’t wipe it off)
  • Put the fish skin side up (flesh down) on skillet, and cook for 3 minutes. You want it browned and blackened
  • Flip the fish, cook skin side down for 2 minutes
  • Put the skillet in the oven, cook for 10 minutes
  • Remove from oven, and remove the bones (nearly impossible to do with the fish raw)
  • Plate and serve
  • Goes well with rice and spinach
