Ingredients:
- 2 lbs Sablefish (4 1/2 pound filets)
- 1/4 cup Mirin
- 1/4 cup Sake
- 4 Tbsp white miso paste
- 2 Tbsp sugar
- 1 tsp fish sauce (optional)
Directions:
- Prep:
- Add Mirin and Sake to a saucepan
- Bring to a boil
- Reduce heat to low, whisk in miso paste
- Raise heat to high (but not boiling)
- Whisk in sugar until dissolved
- Let paste cool to room temperature
- Unwrap fish, pat dry
- Cover fish with miso paste, put in a resealable bag, squeezing out as much air as possible
- Put marinated fish in the fridge for 2-3 days
- To cook:
- Preheat oven to 400°F
- Heat an oven safe skillet on high heat with some oil
- Remove the fish from the bag. Shake off some excess marinade (but don’t wipe it off)
- Put the fish skin side up (flesh down) on skillet, and cook for 3 minutes. You want it browned and blackened
- Flip the fish, cook skin side down for 2 minutes
- Put the skillet in the oven, cook for 10 minutes
- Remove from oven, and remove the bones (nearly impossible to do with the fish raw)
- Plate and serve
- Goes well with rice and spinach
