Should work well with any whitefish, halibut, snapper.


  • 1 lbs Sablefish
  • 1/3 cup Soy Sauce
  • 1/8 cup Mirin
  • 1 Tbsp sesame oil
  • 1 Tbsp cider vinegar
  • 1 tsp fish sauce (optional)


  • Add fish and liquid ingredients to a resealable bag, expel the air
  • Leave in the marinade for 24-48 hours
  • Heat oven to 450
  • Take fish out, pat dry
  • Put fish on a parchment lined baking sheet, cook for 15 minutes
  • Remove from oven, and remove the bones (nearly impossible with the fish raw)
  • Cut into 4oz portions and serve over rice or sautéed veggies (spinach is a good choice)
